Campground Cooking: Easy Taco Salad Over the Fire

Camping Recipes: Easy Taco SaladSJ from Lakeshore RV Center here and I have a new campground cooking recipe to share with you. My parents are camping this week at Sandy Beach Campground in White Cloud, Michigan and I wanted them to have a recipe for a quick lunch or dinner that could easily be made over the campground fire or in their RV microwave oven.

I like this recipe at home when I am in a big hurry and don’t want a huge mess, as the only dishes you will dirty are a spoon and a skillet!  Just as I can cook this over the stove in a few minute’s time, you can easily cook it over the campfire with little mess and more importantly, no dishes. Just sit by the fire, cook, relax and enjoy!

EASY TACO SALAD OVER THE FIRE

Ingredients you will need:

6 snack size bags of Fritos (or comparable brand) of corn chips
1 can of chili (or vegetarian chili :) )
3 cups shredded cheddar cheese
¾ cup sour cream
1 jar 8 oz. Mild Salsa or HOT for those of you who like a little heat in your food!
½ small head lettuce (shredded)
½ cup black olives diced – I prefer green
½ cup jalapeno peppers diced – fresh jalapeno peppers if you want a big kick, pickled if you want to take it easy on your taste buds.

  • Empty the can of chili in a skillet and cook over the fire until heated through, stirring occasionally.
  • Cut the top off each bag of corn chips, spoon about two tablespoons of chili into each of the bags.
  • Top the bag off with cheese, sour cream, salsa, lettuce, olives and the jalapeno peppers.
